What is ‘pure ghee’ in real sense?

We come across a lot of brands these days promoting their ghee and pure ghee being popular again, everybody wants to get it more.

Pure ghee has been one of the key ingredients in the Indian diet for centuries.

Ghee was a must-have ingredient, until the last 3-5 decades, when a lot of big companies started defaming ghee, naming it as fattening and bad for the heart.

Before that ghee was made at home and barely anyone was buying it outside.

But today, the ghee’s popularity is high again and everybody has increased its consumption with a lot of people, especially in the cities are preferring to buy ghee, than making it at home.

Under this situation, it is very important to understand what exactly is ‘pure ghee’.

I mean, we do not want to fall prey to the manipulated advertisements and get products that are not authentic.

Let me start by explaining the definition of REAL PURE ghee.

I will divide this part into two parts – ‘process of making’ and ‘the right substance’.

When we talk about the making process, there are ways of making ghee.

The first method is taking fat (butter/ makkhan) out of the curd using the traditional bilona method, then heating it and you get ghee out of it.

The other method is taking fat out of milk (not curd) and then heating it to make ghee.

The first method gives you the actual ghee and the second method does not.

A lot of commercial companies follow the second method because the leftover milk gets high value when sold in the market, compared to selling curd.

Plus, they also save time and effort of converting milk to curd.

But the ghee that you get in the first method is the real ghee.

Another factor to consider is – “substances”.

With that I mean, what substances which are used while ghee.

The cookware, and fire fuel. 

Because in the heating process, both cookware and fire elements in very small proportions, though, get mixed into the milk and butter. And it impacts positively or negatively on your health.

If the process involved usage of aluminium for heating milk or butter or for storing, the that is going to be harmful for health.

The ideal substance is clay. It is earthen and totally natural and allows very slow heating.

When heated slowly, the most of the nutrition of milk and butter preserved. The faster the heating, the more is the nutrition loss.

A lot of companies use pressure-based heating to complete the process very fast. But this is how you lose a lot of nutrition too.

So if you know any company using cast iron, iron, or earthen clay then they are using the genuine substance.

It also matters if they are using natural fuel material to create fire. Like, wood or cow dung.

Centuries ago, our grandparents and their elders have been following this and were making pure and genuine ghee and other food for the daily routine and they barely had a need to take medicines.

Because the food was so authentic.

Now, I would like to take you a little deeper into this subject – ‘purity of milk’

What is pure milk?

Is it the milk without any adulteration?

Yes.

But incomplete.

It is also important for us to understand – ‘what is the cow eating?’ (Because thats what makes the milk quality good or bad)

You would have come across so many cows eating stuff from the dust bins and rubbish.

There are some dairy owners who feed their cows good quality grass and other nutritious food.

Do you think the milk of these two cows is the same?

This is something that we never try to understand before selecting the milk supplier. But this is extremely important.

Do you know so many dairy owners also inject chemicals in the cows to increase milk production? Such chemicals have an impact on the quality of milk and hence ghee. And it is harmful to both – cows and humans.

The purity and quality of milk is highly dependent on these factors.

And more pure the milk, better is the ghee.

So, if you can, please try to understand what is being fed to the cows from where you are trying to buy your ghee.

To sum it up, I’d say that the purity of ghee is the outcome of – 

  1. No adulteration in ghee
  2. The right process followed to make ghee
  3. Right substances used while making ghee
  4. No adulteration in milk
  5. Cows being fed the right food

Once you are sure about these facts from any ghee brand then for sure that ghee is pure in real sense.

A lot of times you will hear that smell, color, and thickness are key in knowing the quality of ghee.

Yes, that is true. But in today’s technologically and commercially advanced era, any manipulation is possible.

So, if you have assured the above 5 criteria, your ghee are assured of the absolute purity.
